Pancakes Recipe


Growing up in an Indian household, I didn’t even know that pancakes existed until I was old enough to watch and understand English movies and shows.
A characteristic Sunday breakfast in my home was good old parathas and pooris. (I’ll still take those over pancakes any day).
To be honest, they never held any charm for me because I don’t eat eggs and eggs are a key ingredient for making good pancakes. 
Once I tried making them with baking powder and baking soda. They were okay but still I’m not fond of them.

That said my daughter loves them. She wants to eat them every day. And whenever I make them, she would gobble them up one after the other.

Here I’m sharing a simple recipe for making pancakes. It’s an easy one with the ingredients which people usually have in their pantry. Also it doesn’t take much time. 

The Recipe:

Preparation: 5 mins
Cooking: 20 mins
Total: 25 mins
Yield: 7-8 thin and small sized pancakes
Serves: 1-2 persons 

Ingredients:

1 cup Whole wheat flour
1 Egg
1 cup Milk
1 teaspoon Granulated sugar 
½ teaspoon Baking powder
1 teaspoon Vanilla extract
Olive oil as needed

Method:

1. Beat the egg in a bowl until it becomes fluffy.
2. Now add sugar, milk, flour, baking soda and vanilla essence.
3. Mix together until the batter becomes smooth. (It’s okay if there are a few lumps).
4. Let the batter rest for a few minutes.
5. Heat up a pan or griddle. (I use a small pan because of the runny consistency of the batter.
Also it makes them perfectly round).
6. Lightly grease pan with olive oil. Pour the batter onto the pan. (It will spread out into a round
shape because of its texture).
7. Cook on low flame until the bubbles start forming on the surface. 
8. Now flip it with a spatula and cook the other side well. 
9. Repeat the steps with remaining batter.
10. Drizzle the pancakes with honey, maple syrup, chocolate syrup, or any syrup you like. 

Notes and Suggestions:

1. I make my batter runny because I like to make thin and soft pancakes. I feel like they are never cooked well when they are thick. If you like thick pancakes then you can adjust the flour quantity according to your liking.
2. I whisk the batter with a fork when the quantity is less and with a silicon whisk when it’s more
in quantity.
3. When it comes to serving pancakes, there are plenty of choices:

  • With a dollop of cream or yogurt, jams, jellies or preserves.
  • Dust them with castor sugar or a mixture of cocoa powder and castor sugar.
  • Pieces of fruits along with the syrup.

4. Adding 1 ½ teaspoon of yogurt makes them more fluffy and flavorful.
5. You can also add fruits or chocolate chips to the batter.
